Believe it or not,in 28 years of my life,saya tak pernah buat biscuit raya.Buat cake,brownies,tart,cookies utk makan saje petang2 org kate kudapan tue ada lah jarang2.Saya ialah suka kuih tunjuk2 je hahaha.Tapi tahun ni dpt saya dapat seru,mane dtg entah.kahkah jadi kite mulakan dgn biscuit paling senang,org lain sure buat sambil tutup mata je nie.Saya tutup gak,sampai hangus 1st batch hew hew.

Cornflakes madu
Masakkan:
100g butter
100g custor sugar
5 tbp honey

masak kejap je,agak2 gula dah larut,butter cair semua dah,masuk 150g cornflakes,kacau sampai rata,fill into paper cups,letak choc rice,nak bake boleh,tanak pon boleh.First batch terover bake,jadi le gini hahaha.pastu next one i just bake for 5mins(125C).


Cornflakes biscuit

Mix together:
250g tepung
2 tbp tepung jagung
170g cornflakes(hancurkan)

In another bowl,mix together
2 yolks
1tp vanilla essence
170g butter
100g custor sugar

Dah sebati yg liquid mixture baru campur yg adunan kering(tepung,cornflakes).Bentukkan kecik2 tapi hubby rajin gi buat bulat,tgk2 yg kecik la lagi crunchy sebab senang masak.Bake at 125C for 10-15mins.

Even hodoh,habis jugak saya dan hubby mkn.Muhriz mkn cornflakes saje je,baguih betul.

Hubby sy ialah bukan picky eater,tetapi die ialah peng-ayam.Masaklah ayam cencaluk sekali pon die akan makan,yg penting ayam.ini lauk kegemaran suami sekarang,bg sepinggan tanak share kalau boleh.siap pesan tiap2 minggu kene masak nie

Chicken breast-pound thinly then marinate dgn soy+oyster sauce sket,kacau tepung jagung+telor to form batter,coat the chicken with it then fry until brown.

Sauce(sgt senang!): Lemon juice,lemon slice,chicken broth,honey/sugar,salt+pepper,tepung jagung utk pekatkan.
Herbs and Garlic Foccacia Bread

Ingredients
(i halved this original recipe)

2 1/2 cup of flour
1 tsp salt
1 tsp of sugar
1 packet (7 gm) dry yeast
1 tsp dried oregano
1 tsp dried parsley
2 tbsp olive oil
1 cup lukewarm water

Topping
4 cloves garlic - chopped
2 tbsp chopped rosemary
1 tsp salt
3 tbsp olive oil

Directions
1. Mix yeast and the sugar into the lukewarm water. Set it aside until it is foamy. In a mixing bowl, add flour, salt, oregano and parsley. Slowly add in the yeast m ixture to the flour. Knead till the dough pulled together. Add in the oil. Continue to knead until the dough is smooth and elastic.
2. Lightly oil a large bowl, place the dough in the bowl, and turn to coat with oil. Cover with a damp cloth, and let rise in a warm place for an hour or until double it size.
3. Punch the dough down and place the dough on greased baking sheet. Pat the dough into a 1/2 inch thick rectangle. Mix all the topping ingredients together. Put the t opping all over the bread.
4. Bake the bread in a preheated oven for 20 minutes, or until golden brown. Serve warm.


Broccoli Cheese Soup(source: allrecipes.com )

Ingredients (2 servings)

  • 1 tablespoon butter
  • 1/8 onion, chopped
  • 1/8 package chopped broccoli
  • 2/3 can chicken broth
  • 1/8 loaf processed cheese food, cubed
  • 1/3 cup milk
  • 1/2 teaspoon garlic powder
  • 1 tablespoon cornstarch
  • 2 tablespoons water

Directions

  1. In a stockpot, melt butter over medium heat. Cook onion in butter until softened. Stir in broccoli, and cover with chicken broth. Simmer until broccoli is tender, 10 to 15 minutes.
  2. Reduce heat, and stir in cheese cubes until melted. Mix in milk and garlic powder.
  3. In a small bowl, stir cornstarch into water until dissolved. Stir into soup; cook, stirring frequently, until thick.

For the pastry,i've tried both recipes,sama ja,due2 pon ok ;)

Pastry 1
Ingredients
200 g mentega
100 g gula aising
1 camca teh esen vanilla
1 biji telur
420 g tepung gandum

Directions
Putar mentega, esen vanilla dan gula hingga rata (tak payah kembang), masukkan telur dan putar sekejap, perlahankan speed, masukkan tepung sedikit demi sedikit hingga habis dan adunan menjadi doh. Bulatkan, tutup dengan plastic cling, sejukkan for 10-15 mins. Ambil doh,canai nipis antara 2 lapisan plastik, doh mesti lebih lebar dari acuan tat. Buka satu lapisan plastik, terbalikkan ke dalam acuan tat tadi. Ratakan, dan tarik keluar plastik. Kemaskan doh, cucuk permukaannya dengan garfu dan alas dengan aluminium foil, isi kekacang dan bakar 15 minit pada suhu 190C . Kemudian angkat keluar aluminium foil tadi, sambung bakar 5 minit lagi.

Pastry 2
Ingredients

125 g mentega sejuk, didadu kecil
40 g gula aising

1 biji telur, dipukul sedikit
220 g tepung
1 camca teh esen vanilla

Directions
Satukan tepung dan gula aising, gaul rata. Masukkan mentega dan esen vanilla, gaul ramas menggunakan hujung jari hingga adunan berupa serbuk roti, masukkan telur sedikit demi sedikit sambil diadun hingga menjadi doh yang lembut dan tidak melekat dimangkuk. Bulatkan doh, dinginkan 20 minit. Keluarkan doh dari peti sejuk, canai doh antara 2 keping plastik ,lebarnya biar melebihi acuan tat. Buka satu lapisan plastik tadi dan terbalikkan doh ke dalam acuan tat, kemaskan bahagian dalam dan tepinya. Tanggalkan plastik yang satu lagi tadi, kemaskan lebihan doh. Cucuk permukaan doh dengan garfu dan letakkan aluminium foil atasnya. Isi dgn benda berat (e.g kacang soya) sehingga penuh. Bakar dalam oven pasa suhu 175C selama 15 minit. Kemudian, angkat keluar aluminium foil bersama2 kekacang tadi dan bakar lagi 5 minit. Bila nampak sedikit perang, boleh keluarkan dari oven.

Note: ami tak letak kacang.mmg kembang la sket base tart tue ;p

Fruit Tartlet (Filling) 1 biji telur
30 g gula halus
20 g tepung kastard
100 g susu cair
100 g whipping cream
1/2 camca teh esen vanilla fruits(peach,kiwi,grapes,strawberry etc)

Satukan susu dan whipping cream, kacau rata dan masak hingga suam. Dalam bekas lain satukan telur, gula dan tepung kastard, kacau rata. Masukkan susu suam tadi dan kacau bancuhan hingga sebati. Tapis ke dalam mangkuk tahan panas. Masak secara double-boiler sambil terus mengacau hingga pekat. Masukkan esen vanilla, kacau rata. Paipkan krim kastard ke dalam pastri. Kemudian susun buah2an mengikut kreativiti masing2. Sapu dengan apricot glaze untuk nampak berkilat.

Strawberry Cheese Tart(Filling)
250 g cream cheese, pada suhu bilik
60 g gula halus (caster sugar)

20 g mentega
100 ml whipping cream emon
1 biji telur
Strawberry(or blueberry) filling

Pukul semua bahan2 untuk inti kecuali blueberry, hingga licin dan tidak berbintil2. Ketepikan.
Tuang inti cream cheese ke dalam kulit tat yg telah dibakar tadi, sudu kan strawberry filling atas cream cheese, buat beberapa bahagian, gunakan pisau atau chostick, lorekkan supaya menjadi bentul seakan2 marble. Bakar kembali pada suhu 150c selama 10 - 15 minit atau hingga keju keras bila disentuh.

INGREDIENTS
  • 1 cup warm milk
  • 2 eggs
  • 1/3 cup margarine, melted
  • 4 1/2 cups bread flour
  • 1 teaspoon salt
  • 1/2 cup white sugar
  • 2 1/2 teaspoons yeast
  • 1 cup brown sugar **
  • 2 1/2 tablespoons ground cinnamon**
  • 1/3 cup butter, softened**
INGREDIENTS (Frosting)
  • 1 package cream cheese
  • 1/4 cup butter, softened
  • 1 1/2 cups confectioners' sugar
  • 1/8 teaspoon salt
  • 1/2 teaspoon vanilla extract

DIRECTIONS

Place the bread ingredients except ** in the pan of the bread machine in the order recommended by the manufacturer. Select dough cycle; press Start.

After the dough has doubled in size turn it out onto a lightly floured surface, cover and let rest for 10 minutes. In a small bowl, combine brown sugar and cinnamon.

Roll dough into a rectangle. Spread dough with 1/3 cup butter and sprinkle evenly with sugar/cinnamon mixture. Roll up dough and cut into 12 rolls. Place rolls in a lightly greased baking pan. Cover and let rise until nearly doubled, about 30 minutes. Meanwhile, preheat oven to 400 degrees F (200 degrees C).

Bake rolls in preheated oven until golden brown, about 15 minutes. While rolls are baking, beat together cream cheese, 1/4 cup butter, confectioners' sugar, vanilla extract and salt. Spread frosting on warm rolls before serving.





Credit to ida,mama aiman for the recipe,ami tambah chicken cube je sket.Super easy!Hubby kan hantu ayam,so for him,i substitute the half boiled egg with some grilled chicken breast(marinated with:olive oil,garlic powder,paprika powder,pepper,italian herbs,pinch of salt)


INGREDIENTS
1.Spaghetti-boiled and drained
2.Garlic-crushed
3.Green chillies/bell pepper-sliced thin
4.Olive oil
5.1/4 Cube ayam maggi
6.Italian seasoning
7.Vegetables (carrots,mushrooms,as you please)
8.Pepper and salt to taste

DIRECTIONS
Cook the garlic,bell pepper/chillies in the olive oil until they soften.Add the italian seasoning,vegetables,chicken cube,salt and pepper(basically everything hah!) and stir until the vegetables are tender.Add in the spaghetti,mix well and cook for another min,done.Top with the half boiled eggs/grilled chicken.




Here goes the recipe,do try it out hihi.Even one who abhors baking(read:ME!) found it easy.Ingredients:
1 cup butter
1 cup cocoa powder
1.5-2 cups caster sugar
1 1/2 teaspoon vanilla extract
4 eggs
1 1/3 cups all purpose-flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup chocolate chips or walnut(i prefer choc chips)

Directions:
1.Pre heat the oven to 175 C,grease a baking pan.
2. Melt the butter.Stir the cocoa powder,sugar,vanilla extract into the melted butter.Beat the eggs until the mixture smooth.
3. Combine the flour,baking powder and salt.Mix into the mixture.Stir in the choc chips.
4.Spread the mixture evenly into the prepared pan.Bake for 30-40 minutes, do not overbake. Cool in pan and cut into squares.

Ok this series does not need an introduction,everybody loves Nur Amina except me.Please lah let Kat and Adam get back together.Katrina sacrifies everything while Nur just sit and do nothing except nangis and nangis(habis la kene marah dgn peminat Nur=p). But in order to win hati rakyat Malaysia,a typical Malay drama should end with Adam lives happily ever after with Nur,tolong la jgn begitu,bosan =p.Who's with me?


2 Apples - peeled,cored and sliced (tuk 4 org mkn)

Custard Sauce:
1 tablespoon tepung custard - bancuh dgn 1/4 cup fresh milk
2
tablespoons white sugar
200 ml fresh milk

crumble
120gm
tablespoons all-purpose flour**
1 teaspoon baking powder**
30gm white sugar
30gm brown sugar
60gm butter

Boleh substitute ** dgn 120gm self-rising flour

Add sugar,flour and baking powder in a bowl,mix well.Add butter..ramas dgn tgn.Biar texture kasar,jgn over mixed.

CARA:

1.
Fill the bottom of your pan with apples.Pour the crumble over apples.Bake for 30 mins or hingga crumble keperangan @175 celcius
2. Meanwhile, sediakan sos custard...
add fresh milk in a saucepan. Stir in sugar,kacau biar sebati.Reduce the heat,add in bancuhan custard,simmer and let it thicken.
3. To serve, pour the custard sauce over the apple crumble.Serve it hot.
Per neeza's request,here goes the recipe.Sgt simple,selamat mencuba =)
Grilled Salmon tue harith marinated with mixed herb+chili powder+lemon juice.


Smoked Salmon Fettucine

INGREDIENTS
  • fettuccine pasta
  • 1/4 cup butter
  • 1 cup milk
  • 1 tablespoon all-purpose flour
  • 1 cup grated Parmesan cheese
  • 1/2 pound smoked salmon, chopped
  • 2 tablespoons capers
  • 1/4 cup chopped sun-dried tomatoes
  • 1/2 cup chopped fresh oregano
DIRECTIONS
  1. Boil fettuccine for 11 to 13 minutes; drain.
  2. Over medium heat, melt the butter, and blend with milk. Mix in the flour to thicken. Gradually stir in the Parmesan cheese until melted.
  3. Crumble salmon into the butter mixture. Stir in capers, sun-dried tomatoes, and oregano. Cook and stir about 3 minutes, until heated through. Serve over the cooked pasta.
Pan fried Asparagus

INGREDIENTS
  • 55 g butter
  • olive oil
  • salt
  • black pepper
  • 3 cloves garlic, minced
  • fresh asparagus spears, trimmed
DIRECTIONS
  1. Melt butter over medium-high heat. Stir in the olive oil, salt, and pepper. Cook garlic in butter for a minute. Add asparagus, and cook for 10 minutes, turning asparagus to ensure even cooking.
